Ingredients
1 loaf harvest whole wheat bread (the kind with all the seeds on the outside, and a nice soft inside)
1 egg for each person
Smoked salmon
1 soft ripe avocado for every two people
Some fresh herbs, whichever are your favorite – Dill, cilantro, basil, mint, and chives all work wonderfully

Directions
Fill a saucepan with water, and bring it to a light boil. Be sure to not bring it to a rolling boil, as rapid large bubbles may break your yolk and ruin your eggs. Once boiling, add a couple large pinches of salt, and two tablespoons white vinegar.
Lightly toast each piece of bread.
Cut avocado(s) in half and remove the pit.
Scoop out the avocado, and with the back of a fork, smash half of an avocado on each piece of toast.
Top with smoked salmon.
Roughly chop any herbs you may be using.
Crack eggs, and pour into a small ramekin, measuring cup, or bowl.
Working one at a time if you’re not comfortable poaching multiple at a time, use a large slotted kitchen spoon, swirl the boiling water to create a funnel or whirlpool. This will help wrap the egg white around the yolk.
Allow to boil for 3 minutes. After 2.5 minutes, you can use your slotted spoon to extract your egg, and test by gently touching it with your finger. If it feels firm, it’s ready. If it still feels soft, or like gel without any real bounce back, leave it in the water for another 45 seconds.
Place eggs on a plate with paper towel to finish the cooking process. If working in batches, skim out as much of the remaining whites from the water as possible, and begin the funnel process again.
After cooling for a minute, place the egg on top of the avocado toast, sprinkle with fresh herbs and Zonk Foods Everything Bagel Seasoning, and serve immediately.
